Beluga caviar is obtained from Huso huso sturgeon, the biggest of the Acipenseridae family. Due to its immense size it produces the largest fish eggs making it highly desired by many. Their colour ranges from dark to pale grey and are considered by caviar connoisseurs a delicacy worldwide. Beluga caviar is characterised by its mild, delicate taste and buttery texture leaving a slightly nutty aftertaste.
