Baerri caviar is obtained from the Siberian sturgeon, Acipenser Baerii. It has medium sized sublimely re-fined pearls and is blackish or charcoal in colour. Firm, with a slight taste of iodine, delicate and mild it yields a balanced hazelnut aftertaste.
