Roasted Baby Potatoes with Thesauri Caviar
A very easy hors d’oeuvre that will impress your guests
Ingredients (for 2 persons):
- 6 baby potatoes, washed
- 6 tablespoons sour cream
- 30g signature Ossetra Caviar
- Salt and freshly ground pepper
- 2 tbsp. finely chopped chives
Put the potatoes in a saucepan, add cold water to cover by about 2cm and season generously with salt. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size. You can alternatively prepare the potatoes in the microwave for 6-8 minutes, depending on the size.
Preheat the oven. Cut the potatoes in halves and place them on a baking sheet, toss with the butter and season with salt, and pepper. Bake for about 15 minutes until browned at the bottom. Keep warm.
Place the potatoes on a platter cut sides up and add a dash of sour cream on each of them. Top with a spoonful of caviar and garnish with the chives. Serve right away.
