Crème fraîche and caviar blinis

Ingredients for 12 blinis

  • 50 ml fresh milk
  • 1 egg
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 150 gr for all purposes
  • 1 tablespoon olive oil
  • 2/3 tablespoon dry yeast
  • 2 tablespoons sunflower oil for frying
  • chopped chives/dill
  • salmon, shrimps
  • caviar
Whip the milk, egg, sugar and salt together in a bowl. Slowly add the flour until you form a thick mixture. Add the yeast and olive oil and blend in. Cover with a kitchen towel or transparent food film and allow to rest and expand for 30’.
Heat the sunflower oil in a non-stick frying pan on medium heat. Using a table spoon pour thin, equal sized rounds of the mixture in the pan. Fry for 1-2 minutes on each side until brown. Remove from pan and place on some paper towel in order to absorb the extra oil.
Move the blinis in a platter and top them with a teaspoon crème fraîche. Garnish with pieces of salmon, small boiled shrimps, chives or dill and half a teaspoon of caviar.
